Last weekend, residents and valley commuters were treated to the grand opening of Simple Coffee Co. Located on the south side of the historic Morgan Mercantile building in Tabernash, easily accessible from the highway, it is the perfect stop for an eye-opening espresso or chai and a quick bite on the way to work or the slopes.

At Simple Coffee Co, you will find no single-use drinkware, so bring your own cup. “Disposable coffee cups aren’t recyclable, because they are lined with plastic,” said owner Olivia Youngs. “Right now, over 16 billion disposable coffee cups are used each year. We want to be a part of solving that.” 

When you stop in to Simple Coffee Co, you can bring your own coffee mug or take away a cozy-wrapped mason jar. “There was little difference in cost to use glass instead of paper,” said Olivia, adding, “Glass is easy to recycle. I hope this is the wave of the future.” Those that bring their own cup or return their jar receive a $.25 discount on their order. 

Owner Olivia Youngs grew up in Grand County and worked as a barista at Rocky Mountain Roastery while she was in high school. “It has always been my dream to open a coffee shop in Tabernash, it was just a matter of where,” said Olivia, who lives close-by. 

Simple Coffee Co offers a variety of coffee/not coffee options, breakfast burritos and pastries and is open every day but Wednesdays. On Saturdays and Sundays, they’re open from 7:30 am – 2 pm and from 6:30 am – 2 pm other days. This week, they will be closed for Thanksgiving. 

In the veritable breakfast ‘food desert’ of Tabernash, Simple Coffee Co is a most welcome addition to the valley.
